Shenandoah Valley Nutrition Awarness by Penelope Ferguson

What is a registered dietitian, (RD)? After the initial undergraduate work in college, there are additional steps and courses taken as directed by the American Dietetic Association, which address the skill sets regarding competency for (medical) nutrition and food knowledge, which integrate how foods are utilized in body for best performance. Students apply for the internship program, which is approximately 1200 to 1500 hours. It is similar to applying to medical school; candidates are ranked and then selected to intern at medical centers. Once the internship has been completed, the candidates take the national examination, which is administered by the Commission on Dietetic Registration. After successfully passing the exam, the candidate becomes a registered dietitian (RD), who, like other medical professionals, has to complete continuing medical education to maintain registration.

Dietitians go into many fields, I tell people, as many physician specialties there are, there is a dietitian: diabetes, endocrinology, cardiac, gerontology, pediatrics, allergy specialists, digestive disorders, sports nutrition, food service and weight management, to include bariatric services.

What is Nutrition? Many discuss nutrition as if it is just Vitamin C or Vitamin A, protein, or what you need to do “to avoid carbs” or whatever the fad/trend of today is. However, nutrition is the sum total of what you eat and how your body uses the food you eat. Overall the basis of nutrition is food. For example: A) you can be ‘healthy’, eat a poor quality diet, and yet you are not well nourished, or B) if you are medically ill (or have various conditions) and no matter what you eat, your body is unable to digest it or use it properly, and you are not well nourished.

Today, people talk about the emerging science of nutrition and what we know and there is more to be discovered. I believe since the dawn of time with the single-cell amoeba through all the animals and with the primitive hunter-gather human, the provision of the local, natural, unaltered food items is the best diet we would have to eat. Hippocrates stated "Let food be thy medicine, and let thy medicine be food", this was about 300 years BCE. The supermarket of today has more than 30,000 food items, items that come from the entire world…maybe 3 weeks ago, other items that are chemical compositions that are not part of the natural food chain. Many manufactured foods of today have invaded our kitchens and caused problems with our nutrition status.

My premise and what I want to write about is to get back to the local grown foods of the Valley. Most of these local items are inexpensive; they can be prepared and cooked simply without fancy items or lengthy time to prepare. Nutrition is from good food, plain and simple.
